Scientific Name/Specie - Tuber Aestivum
Appearance - Summer truffles have a dark, rough exterior and a light beige to brown interior with a marbled pattern.
Flavor Profile - They have a mild, nutty flavor with earthy undertones, less intense than winter truffles.
Culinary Uses - Summer truffles are versatile in the kitchen, often shaved or grated over dishes like pasta, risotto, eggs, and salads to enhance flavor.
Note
The Black Summer Truffle species (Tuber aestivum) has the weakest aroma and flavor of all truffle species. If you desire a stronger flavor and aroma, then we would recommend Black Perigord/Winter Truffles or White Truffles.
Truffles naturally come in all sizes, this is why sizes sold are on average basis. If you’re lucky you will end up with a bigger piece than expected!
Storage Tips
Always store fresh truffles in the refrigerator in a tightly sealed container.
Gently clean them with a soft brush, and replace the paper towel lining every 24 hours to maintain freshness.
Some chefs prefer to store truffles in a container of uncooked rice. This helps absorb moisture, and the rice can later be used to prepare a flavorful risotto or pasta dish.
A light white mold may naturally develop on the outer surface of fresh truffles. Simply brush it off daily and before use.
