What Does PDO Mean?

PDO (Protected Designation of Origin), known in Italy as DOP (Denominazione di Origine Protetta), is one of Europe's highest certifications for authenticity and quality. It guarantees that a product is produced, processed, and aged entirely within its designated region using traditional methods that have been passed down through generations.

Traditional Balsamic Vinegar may only be labelled Aceto Balsamico Tradizionale di Modena PDO or Aceto Balsamico Tradizionale di Reggio Emilia PDO when it is produced exclusively in the provinces of Modena or Reggio Emilia, Italy, and meets the strict standards required for PDO certification.

Unlike commercial balsamic vinegar, authentic Traditional Balsamic Vinegar is crafted solely from cooked Trebbiano and Lambrusco grape must, with no added wine vinegar, caramel, colourings, or preservatives. It is then patiently aged in a series of traditional wooden casks for at least 12 years, and often much longer, allowing it to develop its naturally thick, glossy texture and extraordinary depth of flavour.

The result is one of Italy's most celebrated gourmet ingredients, prized for its remarkable balance of sweetness and acidity, concentrated fruit character, and exceptional complexity.
